Vacuum cooling is the ideal technology for cooling mushrooms
Mushrooms are harvested at relatively high temperatures. As they are living products, they continue to create heat (and moisture). To prevent excessive temperatures, increase shelf life and achievable prolonged shipping times, quick pre-cooling is important. Vacuum cooling is the only technique that cools homogeneously & thoroughly to the core, thus giving you the maximum extension of shelf life.
Vacuum forces a fraction (0,8 – 2%) of the moisture inside the mushroom to evaporate. This evaporation process extracts energy (=heat) from the product, cooling the in- and outside of the mushroom evenly, from the core. Because of the created vacuum, not only the outside is cooled down, but the product's core as well, as cooling takes place from inside the product. The drying of the mushroom skin during the cooling process is a “free benefit” which will additionally enhance shelf life!
Vacuum cooling is 5 - 20 times faster and more effective than conventional cooling!
Vacuum cooling significantly lowers the superoxide generation of mushrooms, which causes many types of cell damage and is associated with the aging process and several diseases of mushrooms. The significant lower number of superoxides, increases shelf life and prolongs freshness and quality.
On top of that, a significant increase of peroxidase activity can be found in mushrooms after vacuum cooling treatment. Peroxidases play an important role in defending against pathogens, having a positive effect on the shelf-life of the mushroom.
Vacuum cooling reduces the level of lipid peroxides, thereby reducing cell damage and preventing oxidative injury to the mushrooms.
Vacuum cooling increases the mushroom's firmness.
Vacuum cooling down to 0 - 5 °C is possible within 15 - 20 minutes!
Cooling for turf & compost (mushroom compost):
Vacuum Cooling is the only technique that can really cool down to the core of turf & mushroom compost and is therefore the only solution to really extend storage life & transportation time. By using vacuum cooling, turf and bales of (or bulk) mushroom compact can be cooled down close to freezing, bringing the product into hibernation, minimizing the active respiration and internal heat generation. The cooler the product, the lower the activity of the turf/compost, the longer it will stay cold by itself. Cold room storage or cooled transportation after cooling is advised however, to keep the product cool.
For vacuum cooling systems of turf & compost we’ve developed a special range of ultimate power vacuum coolers. These coolers guarantee shortest cooling times (30 - 50 minutes in most cases) at lowest energy consumption. The modular & straightforward but powerful design is extremely cost-effective both on the short and long run, as your maintenance costs are minimized, and your up-time maximized!
For compost thorough cooling down to 0 - 5 °C is possible within 30 - 45 minutes!
For long storage times and large shipping distances, cooling to 1 °C or below is preferred.
For short storage times and medium shipping distances, cooling to 5 °C can be sufficient.
Vacuum cooling technology is up to 10 times cheaper in the energy costs as compared to CO2-cooling. You can save in operational costs and have a return on investment of 2 years.
